Homemade Tortillas

I love this recipe because it is simple, healthy, and tasty.  Also, the recipe doesn't call for baking powder, which in my opinion, sometimes, has an unfavorable aftertaste.  These do require more time to make, as most good and healthy options do, but it's worth it for your health.  You can also substitute other grains for the whole wheat flour, or butter or coconut oil for the olive oil.

Mix:
2 cups whole wheat flour
3/4 tsp salt

Then add:
3 Tbsp. olive oil
3/4 cup warm water

Mix together.  Fold dough over a few times.  Then, let rest for about 10 minutes.  Cook over medium heat (I use cast iron) for a minute or so until brown.

Tomato Shell Soup (A fast and easy family favorite)

This soup is so fast and easy to make.  Our kids love it!

1 large can of tomato juice
1 box of shells
Cheddar cheese-grated

Cook pasta according to instructions on box, and drain.  Warm up juice in a separate pot.  Put them together and add sprinkled cheddar cheese on top.

Famous Mall Style Cinnamon Rolls- really good!

(This recipe came from a dear friend, Amelia, who is always serving others and cooking wonderful homemade food.  This recipe is one of our favorites.)

Ingredients for Dough
1 cup warm milk (105-110degrees F)
1/2 cup sugar
2 1/4 tsp. yeast
1/3 cup butter melted
1 tsp. salt
2 eggs
4 cups flour

Filling Ingredients
1 cup brown sugar
2 1/4 Tbsp. cinnamon
1/3 cup softened butter

Icing Ingredients
1/2 cup butter softened
1 1/2 cup powdered sugar
1/4 cup cream cheese soft (2 oz.)
1/8 tsp. salt

Instructions
Dissolve yeast in warm milk.  Add the remainder dough ingredients.  Knead well about 5-8 minutes.  Let dough rise covered in warm area about 1 hour.  Roll the dough out on floured surface to 21"x16"(it should be thick).  Preheat oven to 400 degrees.  Make filling.  Spread softened butter onto dough.  Sprinkle with cinnamon and sugar evenly over the dough,  Roll dough lengthwise to maintain 21" length.  Cut into a 3/4 slices using unwaxed dental floss or thread to slice dough.  Place in a greased 9x13 pan.  Bake for 10 minutes.  Make icing while baking rolls.  Beat icing ingredients with an electric mixer until fluffy. (If you don’t  have cream cheese you can make the frosting without it). Frost rolls fresh out of the oven generously with frosting.  Serve warm or cold.

*I have also had success freezing the rolls(after they have been sliced), and at a later time thawing, and cooking them.
