 Soft Ginger Molasses Cookies 

These cookies are a perfect fall or winter favorite.  Soft and easy and turn out every time.  This recipe also makes a very big batch, you can half it if you want to make less.  I found this recipe from: bexrecipebox.blogspot.com. 

 Cream:

1 cup butter

1 1/2 cup sugar

Then add and mix in:

2 eggs 

1/4 plus 1/2 cup molasses

In a separate bowl, combine:

3 1/3 cup flour

1 1/2 tsp baking soda

a little less than 1/2 tsp. salt

3 tsp. ground ginger

1 1/4 tsp cinnamon

3/4 tsp cloves

Then, add the dry mixture to the wet mixture. 

Preheat oven to 350 degrees. Roll into 1 1/2 inch balls, then roll each ball in sugar until lightly coated.  Place 12 cookies on baking sheet. Bake for 10 minutes.  Let stand for 2 minutes  Then transfer to a wire rack.  Makes 3-4 dozen cookies

 Crepes

2 eggs 

1 1/2 cups milk

1 cup flour

1/4 tsp. salt

2 Tbsp sugar

3 Tbsp melted butter 

extra butter for cooking.

Combine all ingredients in a mixing bowl.  Whist well, or use an electric mixer.  Melt some butter in a nonstick pan on medium.  Fill a 1/4 cup measuring cup with batter.  Pour batter into pan, swirling the pan until the batter covers the bottom in a thin layer.   Cook until the crepe is golden around the edges(about 45 sec.)  Flip crepe carefully, and cook until golden.

Fill or top cremes with fresh fruit, cheese, ham, powdered sugar, lemon juice and powdered sugar or nutella.

Alfredo Sauce

I have tried a few Alfredo sauce recipes, and this is our favorite.  I like that it doesn't call for flour.  I found it at the "Six Sisters" website. 

1/2 cup butter
 2 cloves garlic minced
Melt butter on low heat and cook garlic 1 minute .  Then add:
2 cups heavy cream  (or evaporated milk)
1/8 tsp. pepper
pinch of salt
1/2 cup grated parmesan
Simmer (don't let boil) for 8 minutes or until think stirring occasionally.

Also, when cooking pasta, remember to boil it with salt!

The Best Crescent Rolls

These rolls are so easy to make and taste wonderful!  How could they not with all the butter!  I usually make them with white wheat flour. If I'm short on time, then I don't let them rise for as long as recipe states, and they have still turned out wonderful!  I know you will love them!

Laurel Jones’ Rolls (From Wendy)

Mix and bubble the following:
1 pkg yeast (or 1 tablespoon if bought in bulk)
½ c. warm water
1 Tablespoon sugar
 
Heat on stove the following:
DO NOT BOIL!!!!
1 cup butter
1 cup milk
Let cool to no more than 110 degrees. This takes
a while for it to cool down. I place my pan in my
sink that Ive filled with a little water. It speeds
up the process.
 
While youre waiting for steps 1 & 2 to be ready, combine the following in a
large bowl :
4 eggs
½ cup sugar
3/4 teaspoon of salt.
Add the cooled milk mixture to egg mixture. Stir. Add the yeast mixture. Stir.
Add 4 ½ cups flour a
cup at a time and mix by
hand w/wooden spoon .
Cover with cloth and rise for
2 ½- 3 hours.
Divide dough in half. Flour your surface and your hands well! If your dough is really sticky, gently knead in
a little extra flour just until it doesn’t stick to your hands.
Roll into 12” circle. I pour melted butter on it...about ¼ cup.
Cut into 16 pieces with a pizza cutter to form pie shapes. Roll
in crescent shape. Place on baking sheet sprayed with pam.
Raise about an hour more.
 
Bake 350 for 15 minutes. Eat and ENJOY!

Crystal's Cucumber Salad

Crystal's Cucumber Salad

We had a picnic with Crystal and she brought this wonderful salad. The minute I tasted it I knew I had to have the recipe! She cooks often just by taste, but she gave me this basic recipe and I have made it several times since for my family who loves it. Once, I even made it without cucumbers, which I consider a main ingredient, and the kids still gobbled it up!

Mince 1-2 cloves of garlic and put in a bowl with some red wine vinegar and olive oil.

Chop up and add to the bowl:
cucumbers
cilantro
avocadoes

Add: garbanzo beans(you can use your own, or in a pinch, a couple of cans, drained)
Mix and add salt to taste.

Chocolate Lava Cake

This is a rich sweet chocolatey cake that is wonderful when served with vanilla icecream!

Preheat oven to 375 degrees.

Melt:
1/2 cup butter plus 1 tablespoon butter
3 Tbsp. cocoa
3/4 cup semisweet chocolate chips
Set Aside.

Mix in a separate bowl:
4 large eggs
3/4 cup sugar
1 tsp. vanilla

Combine and mix well the melted chocolate mixture with the egg sugar mixture.

Then, sprinkle 1/2 cup four & 1/4 tsp. baking powder over the top of the chocolate mixture and stir until just barely combined.  Pour in a greased bundt pan.  Bake for 15 minutes.  (cake will not look done.  Take out and let sit for 15 minutes.  Serve immediately after 15 minutes is up.  It will be warm and gooey and wonderful!

The Best Chicken Salad

Love this recipe!  I got it from a friend, Alison Jorgenson, who said what whenever she made this, people would always request the recipe.  And you will see why!

Mix together:
4 chicken breasts-cooked and shredded(cooking frozen chicken in a crockpot with 1/2 cup of water for several hours works great)
1/2 cup mayonaise
1/2 cup cream
1 1/2 tsp seasoned salt or onion salt
1 cup chopped celery
1 1/2 cup red grapes, halved

In a saucepan, melt 1 Tbsp butter; and 1/2 cup slivered almonds and stir until browned.  Add nuts to mixture just before serving.

Serve with croissants or even on regular bread.
